Guide Review - Calphalon Katana Series Japanese Steel 9" Bread Knife - Review
Calphalon Katana knives are made of VG-1 Japanese steel - making them harder and extremely durable. Multiple layers of stainless steel are used in the layered construction of this knife, giving it a beautiful Damascus style blade finish. The poly-resin handle has a unique style symbolic of the Katana Series, is well balanced and provides a comfortable grip. Although this handle shape is very different, I was surprised at how comfortable it was to handle.This knife should be used with caution and I would not recommend it be handled by children. It is extremely sharp and the 9" blade length, although great for bread slicing, requires a little more care in handling and storing. It easily slices through bread - making it an effortless task to produce even bread slices. It also sliced easily through meatloaf and other foods.
Given the quality of materials used in the construction of this knife, it should hold its edge for a long time. The manufacturer recommends that consumers not attempt to sharpen this knife, but should return it to Calphalon where it can be professionally restored.
Dishwasher cleaning is not recommended - wash by hand in warm soapy water immediately after use and dry thoroughly.
