Preserving Foods at Home

Definition: Preserving is a general term which incorporates many different methods of keeping or storing foods for an extended period of time.

The most common type of food preservation method is home canning which uses a waterbath canner or pressure canner to cook and seal foods in jars. Making jams and jellies, or pickling are also popular preserving methods for fruits, berries and vegetables.

Other methods include drying or dehydrating foods, smoking meats and wild game, or simply freezing foods properly. Though for a shorter period of time, properly sealing and storing refrigerated or shelf foods in airtight or vacuum-sealed containers/bags can also be considered preserving. Preserving is any safe method that is used to preserve the quality and safety of foods, to extend their otherwise short life.

Always follow approved and recommended methods and practices to safely and properly preserve foods at home.
