Definition: Canning is one method of preserving foods at home. Canning is safely and properly processing foods by placing them is specially-designed canning jars in accordance with established canning recipes and practices, and processing with either a waterbath canner or pressure canner, that cooks the contents and seals the jars to preserve the foods.

Every step of the process is done according to established canning practices and approved methods to ensure bacteria is not present and that foods are properly sealed to maintain their right color and food quality for an extended period of time.

Canning as a food preserving method has been around for decades and was often referred to as 'putting up foods' for a later time. Tins rather than jars were used and still are for certain foods, but this process requires different equipment to seal the tins. Jars are more common for home preserving. Though the general canning process is not new, guidelines and instructions have improved over time to ensure safe preserving.

You should only use established recipes, methods and processing times to properly and safely can foods at home.
