Santoku Hocho - Designed by Ernie and based on the Japanese Santoku
The ATS-34 stainless steel blade on this knife is 1/16" X 1 5/8" X 7 1/2" with the overall length being 11.5". The blade is cannel ground with a hand rub finish. The end of the knife comes with a blunt end or a more rounded point. The knife is a full tang style and has been tripled tempered with a subzero quench to~ Rc 60. The bolster is 416 stainless steel. The hidden bolts in the handle are also stainless steel. The handle can be black or green canvas Micarta and is dovetailed into the bolsters.

Kitchen Buddy - Designed by Ernie
With a blade of 3/32" X 1/2" X 3 inches the Kitchen Buddy is hand-crafted from ATS-34 stainless steel. The blade is triple tempered with a subzero treatment to a Rc 60/61. The bolsters and pins are 416 stainless steel. The bolsters are dovetailed to fit into the green or black canvas Micarta handle scales. This knife has a very unique handle design.
