How the GreenPan Thermolon Ceramic Non-Stick Frypan Performed
You can tell at first glance that the GreenPan Thermolon non-stick coating is a step above the rest and it feels very nice too. I would very much have liked to try this frypan without any oil, but after reading all the GreenPan online care tips as well as the specs that came with the pan, wisdom prevailed. I decided to practice my own basic rules of nonstick care and use a little oil every time I used it.
Cooking with a little oil or butter is recommended by GreenPan, but unfortunately this is not as evident when watching the infomercials, which seem to suggest that oil is optional for flavor. Experience has taught me that though some advanced nonstick coatings seem fine at first using no oil to cook with, the coating wears much more quickly. I'd like to preserve the beauty of this pan, as long as possible.
The GreenPan frypan is a joy to cook with. It sears nicely, caramelizes onions well and cleans up beautifully. Slightly oiled, meats and foods released easily. As for eggs, pan conditions were slippery and a chase ensued; a little practice needed to turn eggs over. They slid off to the plate without a problem. The exterior of the pan cleans up just as well. Performance is wonderful - no hot spots and nice even cooking. The 11" pan size leaves ample room for family entrees and one-dish meals. And it's nice to know there's no worry of any chemical fumes when this pan is heated.
I used the frypan on a ceramic cooktop, but it is designed for use on gas as well as on induction cooking appliances. Low to medium heat was used mostly and only short bursts of higher heat to sear meats. The Thermolon non-stick coating is wonderful to cook with.
When it comes to handling, though the stainless steel handle is comfortable, I found it too slippery for such a heavy pan; it should have at the very least, a partial nonslip insert. Otherwise, I love cooking with this GreenPan frypan.
During a month of testing, this pan performed better than expected when it comes to cooking and did not show any signs of foods sticking or other coating concerns, as I've read in some GreenPan reviews. When it comes to nonstick, it's the care that dictates how long the coating will last. Regardless the brand, proper nonstick care is crucial if you want the coating to last. That includes (but not limited to) using a little oil or butter when cooking (no oil sprays), handwashing rather than dishwashing and avoiding prolonged high heat temperatures. I also use no metal or sharp utensils, but prefer wood, silicone or plastic tools.
GreenPan cookware is a little pricier than some other brands, but you do have to consider how the pans are constructed - with a superior nonstick interior and a heavy aluminum base for good cooking performance. I highly recommend GreenPan cookware, but expect to give it the best of care if you want the Thermolon coating to last. That said, I do expect the Thermolon ceramic non-stick coating to last much longer than traditional nonstick. And stock up on proper utensils to use with GreenPan cookware and bakeware.
