Don't Bottle Foods in Jars That Are Not in Good Condition

When it comes to preserving and home canning of foods, the quality of the foods being preserved is extremely important, but the condition of the canning jars you are using, can also have a negative impact on the canning results. And when canning is not successful, it means a waste of time and money. At the very worst, home canned foods that have spoiled can be hazardous to your health.

Flat metal lids should never be re-used during the canning process and these must be replaced to ensure a good seal. But the glass jar itself must be in good shape. How can you tell? Visually inspect the jars from top to bottom before you start canning. Look for cracks or chips and if you find any, discard the jar. Since it's often difficult to see a micro chip, run your finger along the rim of the jar. This area is extremely important since the rim must be in perfect shape to get a good connection with the sealing compound on the lid, which in turn can provide a safe vacuum seal of jar contents.

Likewise, always quickly inspect the new flat lids to make sure that there is no gap in the rubber sealing compound. The jar metal ring or band that is applied to tighten the flat lid onto the jar, should also be free of dents and rust.

Once you are certain all your jars are in good condition, wash them and proceed to sterilize as per your canning instructions.
