Definition: A waterbath canner or standard canner is a large stainless steel or enamel-on-steel cooking pot with a loose-fitting lid, that is used for home canning. It is used on the range cooktop for canning jams, jellies, pickles and high acid fruits and vegetables in preserving jars. A rack is inserted in the waterbath canner to support and lift jars.
Water is added to the canner, heated, filled jars are inserted and the lid is applied. Jars must be covered by the water and the canner must reach a safe gentle boil for a certain period of time, to complete the canning process.
