Canner - Definition and Types Used in Canning

By , About.com Guide

Definition: A canner is a piece of cookware used in home preserving and canning. There are basically two types of canners used in home preserving of foods - a waterbath canner and a pressure canner.

A waterbath canner is a large stainless steel or enamel-on-steel cooking pot with a lid, that is used on the range cooktop for canning high acid fruits and vegetables in sealing/preserving jars. A rack is often included with a waterbath canner and is used to support and lift jars in the canner.

A pressure canner is also large and used on the stove top, but it has a pressure relief valve and gauge to help you monitor the pressure level during the canning process. A regulated pressure canner is used for canning various low acid foods including fruits, vegetables, meats and fish, in sealing/preserving jars.
