How the All Edges Simple Lasagna Pan Performed
Jan 4, 2012
Out of the box, I immediately felt remorse - how could I have thought this pan was a gimmick. It has all the hallmarks of the perfect lasagna pan:
To avoid wasting space, we used some broken noodles to fill in the side turn-around areas. And we began to layer, which felt weird but fun. Noodles fit perfectly. Our layers were thick and we wanted to avoid spillovers, so we stopped after four. This is a heavy pan empty, but loaded it's pretty weighty so a good thing the handles are wide, sturdy and provides a good grip. We covered it with foil and baked the lasagna at 350degF for an hour, removing foil for the last fifteen minutes.
Out of the oven, we allowed it to set for a few minutes (hard to hold back) then started serving. With the custom spatula, it's much easier to remove portions from this pan than from our regular bakeware. Each serving stayed more intact, though right out of the oven, lasagna tends to be sloppier than when it sets longer. This turned out to be the very best lasagna we've ever made.
As for capacity, it was amazing how many servings we got out of this pan. We served five (3 adults, 1 teen, 1 child) and still had more than half left over to enjoy the next day. So this is definitely a family-sized lasagna pan or ideal for those who like to bake once and freeze several servings for later. Cleaning the pan was easy because of the coating, but took longer since there are lots of corners in this maze. Baker's Edge suggests using a dishwashing wand.
Out of the box, I immediately felt remorse - how could I have thought this pan was a gimmick. It has all the hallmarks of the perfect lasagna pan:
- Delightfully deep for lots of layers - we got 4 thick but it could handle 5 thinner layers
- Hard anodized - means a more durable nonstick finish - bonus
- Cast aluminum - for optimum heat distribution and even cooking with no hot spots
- Wide sturdy handles - a must because this is a hefty pan when loaded
- A design that makes it easy to lay down full lasagna noodles - no custom cuts needed

Overall Impression
While there are some very good lasagna pans on the market, I have to say that by design, this pan has an edge over the competition. Yes the maze design keeps the noodles stacked and noodles fit well, but it's the hollow 'maze hedges' that really improve baked results over a standard hard anodized cast aluminum baking pan. And those hedges are also the same height as the outer walls for even heat distribution throughout. That really delivers when it comes to flavor.
The Baker's Edge® Lasagna Pan does what it promises to and deliciously so. Hence the full rating. The baked lasagna looked awesome in this pan. Once the lasagna has had a chance to set, a serving looks picture perfect and removes so easily from the pan. I wouldn't change anything about this pan. I'd love to see a mini boomer-style version for singles and couples.
The downside? Yes, there's a little trade off for this excellent performance and perfect layering - a little longer handwashing time because of all the corners and of course, storage. It won't nest with anything in the cupboard and you would want to protect the nonstick, so no using it for an organizer tray during downtime.
As for other uses, there are some pasta, casserole and other suggestions in the recipe flyer, so the creative cook could find other things to bake/cook in this pan.
My guests were very impressed with this pan and labelled it "the holy grail of lasagna". I highly recommend the Baker's Edge Lasagna Pan; it's well worth the price. It would make a lovely gift for lasagna lovers.
